  2. What we will learn. What is coeliac disease? List foods that are suitable and foods that are unsuitable for this diet. Gluten-free foods available in the shops. Investigate menus from a local restaurant to see if they have catered for a coeliac. Plan and evaluate a menu for a coeliac.

  3. What is Coeliac Disease? Coeliac disease is a disorder caused by sensitivity to gluten. The gluten stops you from digesting your food properly and it causes severe pain in your stomach. It is treated by avoiding gluten in your diet. Coeliac Disease

  4. Foods Gluten is a protein found only in plant foods such as wheat, rye, barley and oats. Think about the foods we eat that contain these grains.

  5. Rye Wheat Barley Oats Flour Bread/Crumbs Pasta Crackers Noodles etc Ryvita Rye Bread Beer Whiskey Porridge Granola Muesli Oat Bread Beer Soups Stews

  6. Dont forget the hidden sources Soups Chocolate Crisps Sweet Yoghurts Baked Beans Chicken Nuggets Fish Fingers Sausages.

  7. Gluten-free products There is an increasing amount of gluten-free products in the supermarkets. Activity: Research the range of gluten-free products available. Cost these products and compare to the normal foods.

  8. Local Restaurants Lets see if local restaurants have catered for coeliacs . Pick a sit-down restaurant in your local area. Look up their menu on the internet and search for their choice of gluten-free dishes.

  9. Activity 1. Design a three course dinner menu for a person who suffers from coeliac disease. (Use menu planning rules) 2. Evaluate the nutritive value of the menu -use the sources and functions of nutrients handout to help you.
