Traditional Molasses Preparation and Optimization Study in Algeria
This study focuses on optimizing the preparation of date syrup, known as molasses, using traditional methods in Algeria. The objective is to maximize bioactive substances, total soluble solids, and % reduction of DPPH, while minimizing the formation of HMF compounds. The process involves washing, cleaning, cutting, immersion, concentration, filtration, and thermal treatment of Mech-Degla dates. Additionally, the study includes the characterization of problematic varietal biodiversity and alterations in date syrup production.

Problematic Varietal biodiversity of dates in Algeria Amoung dates with dry texture namely common dates characterized by their richness in sugars, fibers and metals. Problematic Date syrup is know as Rob or Molasses is produced by traditional method in algeria. It is obtained by cooking dates in hot water. This syrup is caracterized by soluble solids rate of around 70 Brix and reddish black color. , GAVCTS December 20-21 2022 Paris 3
